The healthy kind of olive oil is extra virgin, also known as cold pressed. Olive oil processing should not involve chemicals; olive oil should be pressed without heating. There are varying levels of quality of olive oil. Use only those with the words "extra virgin". This is a legally protected phrase. Never use olive oil which doesn't have the words "extra virgin" on the label. As well as being yummy, and perfect for adding to all kinds of different recipes, olive oil is also extremely healthy. Olive oil contains 70% Omega-9 monounsaturated fatty acids and has a high vitamin E content. Olive oil also lowers the risk of heart and vascular disease. Extra virgin olive oil contains chlorophyll. Chlorophyll has a cleansing effect and provides oxygen to our cells, for greater health and energy. So it's super healthy!
