From cheap Cava to high quality. Not that long ago, Spanish sparkling wine was no more than a mass-produced article, available everywhere at bargain prices. This is mainly still the case for the some 8 million bottles consumed in Spain and 10 million bottles of Cava exported every year.
But gradually a few cava houses completely changed course and set out to have their Cava compete with the very best Champagnes. Some fully succeeded in that. These exceptional Cavas are currently listed in the 4 internationally-valued 3-star Michelin restaurants in Spain: El Bulli, Arzak, Can Fabes and Martin Berasategui.
