Preparation 10 minutes, cool down for one hour
Cut the courgettes into thin strips. Briefly blanch. Let them cool in a bowl with iced water, along with the garlic, the oil, the lemon juice, the pepper and the fleur de sel. Place in the fridge for one hour.
Garnish with parsley before serving.
